Pemanfaatan Singkong Menjadi Tepung MOCAF (Modified Cassava Flour) Bernilai Tinggi Sebagai Upaya Peningkatan Ekonomi Dan Produktivitas Wirausaha Ibu Rumah Tangga
Abstract
Singkong merupakan salah satu hasil pertanian lokal yang memiliki potensi besar di Desa Kemiri, Kepanjen. Meski banyak ditanam oleh penduduk, potensi ini belum dimanfaatkan secara optimal untuk meningkatkan pendapatan keluarga. Kurangnya pemahaman dan inovasi dalam pengolahan singkong menyebabkan produk yang dihasilkan memiliki nilai jual yang rendah. Salah satu solusi yang diusulkan adalah pelatihan pengolahan singkong menjadi tepung singkong termodifikasi (MOCAF), yang dapat meningkatkan pengetahuan dan keterampilan masyarakat, terutama ibu-ibu, dalam memproduksi dan memasarkan produk. MOCAF memiliki kemiripan dengan tepung terigu, namun melalui proses fermentasi yang dapat mengurangi ketergantungan pada impor gandum. Program ini bertujuan untuk memperkenalkan proses pembuatan, pengemasan, dan pemasaran produk MOCAF kepada masyarakat, sehingga diharapkan dapat meningkatkan potensi ekonomi dan ketahanan pangan di Desa Kemiri.
